This coffee comes from Buku Sayisa, one of the highest coffee growing areas in Ethiopia, at elevations of 2200 masl. At this altitude the coffee matures very slowly and tends to be more aromatic than average. The coffee is produced from heirloom varietals grown by small hold farmers. Ethiopian heirloom varietals are indigenous plants adapted to the growing conditions and vary in flavor according to the microclimate in which they grow.
This coffee comes via DW Exports, a locally owned exporter that has built a reputation recently for its award-winning specialty grade coffees. It owns and operates numerous washing stations in the Hambella Wamena district where they separately collect and dry uniform coffees from uniform agro-ecology to have uniform cup quality. They accept only fully red-ripe cherries, harvested at their sweetest flavor, wash them to separate out any less-than ripe ones, then dry them on raised beds of woven bamboo strips for 8-12 days to allow the sweetness of the fruit to infuse the coffee beans.
We give these beans a medium roast to preserve their distinctive floral aromatics and enhance the honey-like sweetness.
